Food processing environments have limited ways to reduce mold, bacteria and contaminant outbreaks. The U.S. Department of Agriculture’s Economic Research Service estimates that the US spends more than $15 billion annually on foodborne illnesses.
A study published by the Grocery Manufacturers Association (GMA) found that the largest recall costs come from business interruption and product disposal. Following an outbreak, manufacturers said their main concerns were the health and safety of the customer, brand protection, supplier relationships and cost recovery.
